A unique lot from Anares Salaverri. It is named after Rosita – a woman who has been welcoming guests to the Santa Rosa estate for over 50 years. Her story preserves the memory of the place and brings generations together
The SL28 grapes are fermented in closed barrels for 300 hours. They then undergo two stages of drying: closed and open. During closed drying, the berries are covered with a thick, opaque material, which helps retain moisture and develop a deeper, more complex flavour profile. Next comes open drying: the berries are spread out evenly in the sun.
This approach creates a complex and nuanced flavour with distinct acidity. In the cup, you can detect notes of dark grapes, pomegranate, Sicilian orange, port wine and caramel.
